Roquefort French Fries & Champagne

A French theme today. Why? Because July 13th, 2020  is national French fry day and July 14th, 2020 is the French holiday Bastille Day. Made hand cut fries drizzled in truffle oil, chives, and added some Roquefort cheese. The truffle oil alone on French fries is delicious coupled with Roquefort cheese it’s the bomb! The cheese gradually melts away on the potatoes, so forget the ketchup you don’t need it. It’s an incredible dish all by itself. I fried the potatoes with a few sprigs of fresh bay laurel. It just so happens, I do have a bay laurel tree growing in front side of my house. I love cooking with bay leaves. The bay leaf leaves a soft sweet floral taste like thyme and marjoram on foods. Lots of great cooking possibilities, I stuff my chickens with bay leaves before roasting in the oven. Great for simmering a few sprigs in pasta, soups, stews and casseroles too. Sometimes, I just simmer bay leaves in a pot of water on the stove top to get the lovely scent circulating through out the kitchen.
