Eat a peach, or you can try a peachy salsa. So simple to make. This recipe makes approximately 3 cups of salsa.
You will need:
- Peaches (fresh peaches diced one cup)
- Jalapeños (diced 1/2 cup)
- Tomatoes (diced 3/4 cup)
- Cilantro (diced 1/2 cup)
- Purple onion (diced 1/2 cup)
- Olive oil ( 1/2 cup)
- Apple cider vinegar (1/2 cup)
- Salt & pepper to taste
Place all ingredients in a bowl, mix with a spoon, and chill for 30 minutes to an hour. When you are ready serve add a touch of salt and pepper to taste.
I enjoyed my peachy salsa with corn tortilla chips and sipping this highly aromatic dry white wine called “Torrontés”. Torrontés is Argentina’s star signature white grape. This particular wine is made by Argentina’s leading and most innovative Latina winemaker Susana Balbo who also makes a wide array of highly acclaimed and award winning wines. However, it was Susana who took the Torrontés a common white blending grape to another level. I hope to taste Susana’s late harvest Torrontés, it sounds extraordinary too. ¡Felicidades!
