The direct press methodology is preferred among traditional wine aficionados and winemakers in the old world. Direct pressing is the process of separating the grape juice from all the elements that make up the berry. Versus “crushing” actually breaking the grape berries allowing the juice, pulp, and seed to mingle with the skins and stems of the grapes.
